I was paging through an old Prevention the other day (it had been floating around here since the summer, ha) and an article on eating more whole grains caught my eye, especially their idea to make Pumpkin Pie Oatmeal as a means of getting an extra fiber and vitamin boost first thing in the morning. Oatmeal is not an exciting food but if you can find a way to make it that appeals to you (or is at least tolerable every once in awhile) then it really is one of the best ways to start the day. And considering January is National Oatmeal Month it seemed particularly appropriate to give this recipe a shot.
What you’ll need:
- 1/3 cup canned pumpkin
- 1 cup plain oatmeal
- Brown sugar
- Spices to taste (cinnamon, pumpkin pie spice, nutmeg, a little salt)
What to do:
Make the oatmeal per package instructions, mixing in the 1/3 cup pureed pumpkin, sugar, and spices. Stir and enjoy!
I tried this and it’s actually very good (assuming you like pumpkin pie!).
